Organic honey

Apis mellifera · wildflower

Honey is where our name comes from: in Maya, kaab. We source it from apiaries surrounded by forest and wild vegetation, far from conventional farmland.

Raw, the way bees make it

Our honey comes from the wild blooms of Central America's forests and organic farmland. Each harvest carries the colour and flavour of its season's flowers.

We extract and filter it without heat, so it keeps its enzymes, aroma and natural properties. Over time it crystallises, which is a sign that the honey is raw and unprocessed.

Hives are managed without antibiotics or synthetic products, as organic production requires.

Why our honey

What we check in every lot

Moisture

Low moisture prevents fermentation and keeps the honey stable in transit and in your warehouse.

Freshness

HMF and enzyme activity show the honey has not been heated or stored poorly.

Purity

Single-origin honey, never blended with honey from other countries or with syrups.

Traceability

Every lot is identified by its harvest area and extraction date.
